"Farming beyond organic since 2010, the operation emphasizes habitat conservation for beneficial insects and native pollinators while actively combating food waste: surplus produce is routed to local gleaners and partners such as FeedHV, Second Chance Foods, and the Fishkill Food Pantry; scraps are composted and inedible apples are worked back into the soil to boost nutrients; and blemished fruit is transformed into pies, preserves, and cider. Staff note the labor parity between ‘ugly’ and perfect produce and encourage consumers to accept imperfect items to help build a more sustainable, resilient food system." - Meredith Bethune
