Pastrami is the centerpiece — sourced as already brined, smoked, and seasoned offsite, then given an extra layer of seasoning and steamed for hours — while the regular brisket is slowly braised and the corned beef simmers in stock. The burger has a spiced patty that leans toward kebab flavors, and a “Brooklyn cheesesteak” swaps brisket for rib eye; everything is halal, which draws its own clientele.
