"There’s a certain joy to drowning a starfish in a bowl of foam (to be clear, the starfish is made of truffled cheese). This dish is the highlight of Kojin 2.0’s tasting menu, which is $150 per person, but the best way to experience this restaurant. This dish has so many textures—the weightless starfish, torched cheesy espuma, and lightly poached scallops suspended at the bottom of the bowl.
