"El Primo Red Tacos hopped on the 2020 birria train and never got off. This casual Downtown taqueria takes birria and applies it to everything you can imagine: ramen (the birriamen), nachos, and tostadas (the vampiro). They have five tacos on the menu, but the contents are mostly the same—and always involve birria. One adds cheese, the other adds cheese and guacamole, and the only major change between all of them is the type of tortilla. These aren’t tacos so good you'll write about them in your journal—they’re the kind that gets the job done on a Monday when you need a quick lunch to silence the stomach gurgles. For those occasions, our favorite taco here is the quesabirria. It’s hefty and made with a flour tortilla, melted cheese, and stewed birria meat. Just know that nothing comes with consumé—you have to add it as a side order if you want to dip your taco into that smokey broth." - Virginia Otazo
