"Walking into La Capa, a tavern located in one of Madrid’s most Castizo neighborhoods, feels like you’re time-traveling back decades, yet it remains very much rooted in the present. The restaurant’s newest generation of owners (neighborhood locals) opted to keep the restaurant’s traditional look while elevating and localizing the food sourcing model and bringing in guest chefs. Like most typical old-school tapas joints, it has that everyone-knows-your-name energy (you can reserve via Instagram, but La Capa opens in-person reservations each Thursday for the neighborhood regulars). There are also biodynamic Madrid wines on tap, which you should pair with their signature crispy veal tenderloin with roasted red peppers and a nostalgic Madrid-style ice-cream sandwich featuring ice cream made from the milk of goats herded by Guadarrama shepherds near El Escorial.
