There are shelves and refrigerators lining the walls filled with mock meat, vegetables, and any assortment of condiments you can think of–except fish sauce. Head to the counter and order a couple of bánh mìs with vegetarian ham or lemongrass tofu, and you’ll be treated to warm, dense white bread, light and sweet mayo, and a mountain of herbs and cucumber.
