Then settle in for the hardest part of eating at Lanzhou Ramen: picking your preferred noodle thickness (hand-pulled flat, thick, thin, or thinnest—we usually do regular but there’s no wrong answer). This Buford Highway spot makes giant bowls of Chinese beef noodle soup. And there’s a heaping, squiggly pile of noodles in every serving, which is a good thing because that’s kind of the whole point here. Then a list of 19 proteins await including shrimp, lamb, duck, and oxtail. Our favorite is the beef, which is cut into thick meaty slices.
