"Acapulco Bar is one of the most exciting new openings in Valencia, not just because the food is excellent, but because it goes beyond the usual tacos and nachos you’ll find at most Mexican spots in Spain and leans into seasonality and local ingredients. The result is a short, smart menu of dishes like hake croquettes in green chili sauce, grilled sardines with watercress and mole, and rabbit al pastor that melts off the bone. Many of the ingredients come straight from Mercat de Ruzafa, and the wine list favors natural bottles and under-the-radar labels that pair up nicely with all that heat and acidity.
