"Founder Kumasaburo was a chef who made a name for himself in itamae kappo. Third-generation owner-chef Kumasaburo carries on the Tankuma tradition with his son. They serve ‘monmo’ dishes, in Kyoto dialect meaning ‘as-is’, so as to bring out the natural flavours of the ingredients. The horakuyaki dish featuring barracuda and matsutake smoked with pine needles is an autumn speciality.
