Guests reach it through the back of The Chinnery and a service hall, then settle into a music- and champagne-led tasting where executive chef Robin Zavou and sous chef Reto Weber present each course, discuss pairings, and spark easy banter. Under Zavou, it has evolved from an offshoot of Mandarin Grill + Bar into a standalone playground for creativity, where off-menu ideas are tested and, at times, guests are invited to gather by a kitchen counter to watch preparations like a limoncello sorbet.
