"In Bath I found a Tokaji Aszú Martini that gives the sweet wine a larger pour alongside neutral vodka, a spritz of ginger essence and a tangerine peel, which lets the Aszú’s apricot, honey and orange-blossom aromas shine; the martini’s acidity cuts through and enhances rich bites such as the chicken liver parfait tartlet topped with chicory jam and Tokaji-poached grapes that burst with caramelised fruitiness, finished with crispy chicken skin and fresh thyme." - Lane Nieset
