The quality ingredients are sourced almost exclusively from the (Lake Constance) region – information about their provenance features on the menu – but international flavours come into play too. In addition to one or two classics, the team cooks up modern-inspired dishes such as "Courgette yoghurt chilled fruit soup, lemon oil feta & almond thyme crunch" and "Roasted Allgäu carp fillet, yellow tomato and caper sugo, herb couscous".
