The dishes celebrate the best of Brittany, showcasing first-class seasonal ingredients: monkfish gravlax with creamy fennel and seaweed jam; plaice, partly mashed potatoes and mikan sauce; melt-in-the-mouth baked apple with a crunchy almond topping and cider caramel, for example.
