"This simple shop is famous for its pork ribs that are marinated for 20 hours before being deep-fried until crispy on the outside and tender on the inside. Another favourite is ‘Jadeite tofu’ – shrimp, ham, coriander and tofu wrapped up in fried tofu skin. Crabmeat and baby oyster thick soup, and whelk and squid soup with leeks are the other recipes from a bygone era that are now seldom found elsewhere." - Michelin Inspector
