"I was most impressed by Syncline, a biodynamic Washington producer named after the geological dividing line we passed; it’s one of the ship’s sommelier favorites and delivered exquisite pairings (a Grenache–Carignan matched with an apple-mostarda pork chop, a Gamay Noir with a garlic chicken salad), though I was particularly partial to its Mourvèdre from Red Mountain AVA, which tasted like an explosion of lavender and rosemary — and later a Syncline Grüner Veltliner showed apricot-inflected character." - Becky Cooper
