Acclaimed Chef Charlie Palmer Set to Open Swanky New Hotel Appellation for Food-Obsessed Guests in Healdsburg | Eater SF

"Planned to open in late 2023, I'm intrigued by Appellation in Healdsburg, chef Charlie Palmer's collaboration with Four Seasons veteran Christopher Hunsberger that will be the first of a small chain (with additional locations planned for Sun Valley, Idaho in 2023 and Pacific Grove in 2024). The 108-room hotel is being billed as a property built around a destination's distinct culinary experiences, featuring "maker spaces" where guests can choose from interactive demonstrations and classes led by local creators such as winemakers, farmers, and cheese makers; a prep kitchen that doubles as the hotel front desk with chefs to interact with in the lobby; and a pantry on each floor stocked with local products like snacks and cocktail kits plus a cookbook library. Typical amenities will include a fitness center, two pools, a spa, and event space, and each hotel will house a Charlie Palmer restaurant and bar.
