"At this kind of dollar-dumpling storefront I was astonished by the excellence and low price of their pork pot stickers; the menus offered little else beyond hot-and-sour soup and sometimes kimchi. Equally amazing were wedge-shaped sandwiches made from big round sesame-crusted loaves (shaobing) cooked in the same lidded fryers/steamers: the loaves were cut into wedges, split horizontally, and stuffed with a single slice of dried aromatic beef and a heap of pickled vegetables, sometimes sprinkled with chopped scallions.
