"Slated to open in 2019 on five acres in Dripping Springs, this brewery aims to offer a beer menu described as “fresh, creative, barrel aged, blended and sessionable,” with an emphasis on using local ingredients when possible. Founder Kenny Coleman leads the project alongside head brewer Cory McGuinness—a native of Portland, Oregon who most recently worked at the award-winning Pravda Beer Theatre in Ukraine—and bookkeeper Thelma Coleman. Food options are still being explored, but the team wants offerings that will balance their creative beer styles. The property is designed to complement outdoor leisure pursuits, presenting a comfortable, laid-back and family-friendly atmosphere.
