"Opening this summer at the resort next to the former Holsteins location, the new smash-burger concept will churn out a small menu of burgers with lacy edges, crispy grilled cheese sandwiches, and seasoned fries as the property's only dedicated burger restaurant. The burger version gets a thin patty with nearly caramelized edges, lettuce, tomato, and raw onion, and a citrusy sauce of yuzu and sesame oil; add-ons like avocado will be available. The concise menu will also have a crunchy grilled cheese fried in mayonnaise, hot dogs slathered in a chili-like sauce, and crunchy fries in a furikake seasoning. Ice cream concretes will be offered in flavors like strawberry and Oreo cookie. Mark Crane, the executive chef for the Cosmopolitan, says that smash burgers are here to stay, rather than a short-term trend: "I think people are into it for a while because of the flavor you’re able to generate," he says. "Also the speed that you’re able to turn it around. For us, it takes three minutes [to cook] a patty." - Janna Karel
