"Owner and chef Libby Billings opened Elote Cafe in 2008 with limited lunchtime hours and the goal of closing in time to pick her kids up from school. Since then, both her kids and her restaurant have grown. This colorful, vegetarian-friendly downtown spot is known for puffy tacos (black beans and sweet potatoes for the vegetarians; chicken, pork, or beef for the omnivores) and Tequila Club, which honors customers with a plaque if they sample 30 of the bar’s 100-plus bottles. Billings centers her restaurant around serious sustainable practices and playful community events, including pillars of the calendar like drag brunch and lucha libre." - Jess Brent
