"At Baked by the Ocean in Long Beach, I saw Cat Schimenti’s bombastic rainbow bars with thicker, more prominent chocolate and raspberry jam that includes seeds for a subtle crunch; she uses French almond paste (about 30 pounds a week) and cuts each bar by hand.
