"Operating as a delivery and retail-only bakery during the COVID-19 pandemic, Rubinstein Bagels — praised by The Seattle Times as a standout in Seattle’s growing bagel scene — is planning a permanent cafe inside the Via6 luxury apartment building at Sixth Ave and Lenora in mid-October. Owner Andrew Rubinstein has been perfecting his bagel recipe since 2016, using long-fermented sourdough with organic ingredients baked on a stone hearth; he currently makes 400–700 bagels every weekday with just one other employee and shares a kitchen with Ethan Stowell’s Cortina Cafe. Pivoting to delivery “saved my butt,” Rubinstein says, and once the shop opens he plans to expand beyond the current eight flavors (including salted rosemary and shallot) to different dough types, add breakfast sandwiches and lunch sandos, partner with Olympia Coffee Roasters on the beverage menu, and potentially expand to the Eastside." - Gabe Guarente
