Chef Prang Rothenberger grew up on Koh Lipe, and meals at Chao Lay incorporate the eclectic nature of the nomadic community’s culinary identity — meals may start with satay or crispy fried pork belly, before transitioning to khao man gai or whole fried trout garnished with fried garlic.
