"After construction and permitting delays, I learned Trinity Cider — Deep Ellum’s first cidery at 2656 Main Street — will open its doors Friday, October 12. Its unusual layout, with fermentation tanks in the taproom, delayed TABC and TTB permits until a wooden bar was built as a barrier; now the space is mostly complete with a dark wood bar top, hanging Edison-bulb lighting, black tile accents, exposed brick walls, glycol chilling equipment installed, and new furniture. Co-owner and head ciderist Josh Price and the team will begin brewing in the next couple days and plan to start with six ciders on draft, including The King’s Peach, Deep Ellum Dry (a sugar- and gluten-free brut-equivalent), and a dry rosé cider colored with hibiscus, while road-testing additional flavors such as prickly pear, sour cherry, grapefruit, habanero cucumber, a spiced blend with coriander, cinnamon, and cloves, and a ghost pepper–infused cider that will require patrons to sign a waiver. A successful $10,000 Kickstarter helped fund equipment, barware, and furniture — including a frozen margarita machine to make cider slushes — and the opening-day extravaganza kicks off at 6 p.m. on Friday, October 12." - Alaena Hostetter
