Kadhi is a fragrant, golden yogurt sauce made with chickpea flour and spices, and it’s combined here with kachori, deep-fried pastries stuffed with lentils and onions; the kachori dough is stiffer than samosa dough yet remains delicately flaky, so the fritters keep a crisp exterior that contrasts beautifully with the creamy spiced sauce.
