"Docked in the Poway community of Sabre Springs, this sparkling new 300-seat, 10,000-square-foot restaurant, bar, and two-acre outdoor space transformed a drab cafeteria and parking lot into an attractive office amenity and appealing dining destination. It's the first ground-up, all in-house project from Legal Restaurants, designed by Keoni Barcarse, with a menu written by founder/chef Antonio Friscia and culinary director Fern Tran and newly added executive chef Ricardo Heredia, who returns from Las Vegas where he ran José Andrés’ China Poblano. Partner Nick Sanderson developed the concept after discovering a link to swimming legend Florence Chadwick; her family donated archives, and the space includes subtle sea- and swim-inspired elements and choice pieces of memorabilia. Currently open Monday through Friday from 7 a.m. to 2 p.m., the eatery features Sightglass Coffee and a menu that includes Japanese taiyaki (fish-shaped pastries filled with savory greens or sweet berries), a warming rice porridge with chicken meatballs, and a steak-and-eggs served with a fancy French version of tater tots; lunch offerings include a shrimp Louis salad, a salmon paillard, a Cubano sandwich riff with braised beef and pastrami, and a double cheeseburger. Happy hour, dinner, and Sunday brunch will be introduced soon alongside a cocktail menu by spirits director Jason O’Bryan and a wine list curated by Victoria O’Bryan." - Candice Woo
