"Potbelly Sandwich Shop opens the first of 10 local outlets today, bringing Mediterranean chicken, the PB&J, a pizza variant, the turkey, ham and bacon Clubby, and a skinny mushroom melt to Henderson. The restaurant at the Shoppes on the Parkway development sits near St. Rose Parkway and Amigo Street. The first 100 people to visit Potbelly Henderson will receive a free sandwich. After the first 100 visitors, all customers will receive a free cookie with their purchase for the first week. Created in Chicago in 1977 and now expanded to more than 450 locations.
