"Top Chef alum and Michelin honored Carlos Gaytán opened a trio of dining concepts at Downtown Disney District. Céntrico and Tiendita are more casual, with easy Mexican lunch dishes or takeaway tacos. The two-story Paseo, with its sleek dining room and picturesque circular staircase designed by Jorge Gracia of GraciaStudio, is the jewel of the three. Executive chef Rudy Lopez oversees the kitchens in Anaheim, while Gaytán tends to his growing restaurant footprint, which includes Tzuco in Chicago. At Paseo, steamed lamb barbacoa is marinated in orange and avocado leaves.
