"Without fanfare, I found that Little Conejo opened a cart at Prost Marketplace bringing favorites from its flagship: suadero and choriqueso (chorizo and cheese). The full menu includes fillings like carnitas and al pastor (priced at $3.50 per taco along with the two meats above), plus oyster mushroom, nopales, fried fish, and lengua for $4. Beyond just making their own tortillas, Mychal Dynes and Mark Wooten grind their own masa, and their Vancouver counter-service spot on W 6th Street served achingly delicious tacos; the restaurant also has a fully stocked Mezcal bar, though the cart won’t carry agave spirits.
