"I’ll have more to share on this new hotel restaurant in Fort Worth soon. But I need to highlight Duchess’s shareable charred eggplant and fried onion dip served with an array of vegetables, including tiny carrots and radishes with the stems still on. It’s an eye-catching dish — the four-top next to me placed an order after they saw mine arrive. I am seeing various vegetables get the hummus treatment all over DFW this summer, and I love it, but this was the first iteration of an eggplant hummus or dip that I’ve come across. Eggplant does a great job serving as a blank canvas for the flavors you put on it, and the crispy fried onions, which are smothered in chile crisp, have so much room to shine. I loved it best with the potato chips, but the purple turnip quarters were a close second. All that crunch with such a soft, supple dip was a truly enjoyable experience." - Courtney E. Smith
