"Taking over the space that previously housed Sabatino’s Italian Kitchen at 895 Main St., Hakata Ramen is expanding to Waltham; I note it already operates locations in Quincy and Boston’s Back Bay (the latter called Shin Hakata Ramen) and that husband-and-wife team Simon Su and Jing Zhang—who run the Back Bay spot, with Su co-owning the Quincy location—will run the Waltham restaurant. The Japanese spot specializes in ramen and sushi, and I expect the Waltham menu to mirror the others, including tonkotsu ramen (the pork-based style from Hakata in Fukuoka) served with roasted pork belly and toppings like egg, scallions, ginger, and garlic. The Quincy location also offers a vegetarian ramen option plus sushi, teriyaki, tempura, donburi, sushi burritos, and sushi burgers, while the Boston location has a smaller menu; the Waltham location received its license approval and could open by the end of March." - Dana Hatic
