"I learned the G Butcher Shop will be led by Mike Lawson — who headed the cured program at Oak Cliff’s Macellaio and served as executive sous chef at Gemma and Sachet — and Courseau says the shop is committed to providing the highest-quality meats brought to market in line with their principles as part of a movement known as 'ethical' butchering. Beyond retail cuts, the shop will double as a sandwich shop at lunch and a breakfast spot with fresh-squeezed juice and pastries from its sister restaurant Up On Know; you can dine at counter or patio seating or grab prepared foods to go, including rotisserie chicken, charcuterie, and terrines. Hours begin at 8 a.m. Monday–Friday for breakfast, 11 a.m.–3 p.m. for sandwich service and retail until 6 p.m., and on Saturday and Sunday the shop will be open from 11 a.m. to 6 p.m." - Adele Chapin
