"Founded by Jared Rouben, this brewery-and-restaurant group launched a 14-seat tasting counter in 2020 that earned two Michelin stars under chef Jared Wentworth before being demoted to one; it has since expanded with a sushi restaurant in New York City (opened February 2023) and a West Palm Beach outpost. For summer it is staging a pop-up in Beverly Hills (June 13–September 14) where chef Hiromi Iwakiri will present high-end, Tokyo-meets-LA sushi paired with the group's inventive Asian-influenced beers — notable dishes include Ora King salmon with black truffle and mushroom duxelle and a scallop hand roll with snap peas and corn, while beer offerings run from a juiced lychee IPA to a pressed Asian pear saison aged in Sangiovese barrels." - Matthew Kang
