"At 1700 Platte Street, I expect the fourth Maria Empanada location to open by September on the ground floor of a new office building with street-front retail and underground parking. The LoHi spot will occupy 1,975 square feet and serve freshly baked Argentinian sweet and savory goods for breakfast, lunch, and dinner; it will also feature an espresso bar and offer wine, beer, mimosas, and sangria in carafes known as pinguinos. Cadence Design Studio, which shaped the brand’s previous eateries, is finishing the space, which sits in a building that will serve as the hub for British Petroleum’s new U.S. headquarters alongside tenants like Workiva. Maria Empanada began in 2011 when Argentinian chef-owner Lorena Cantarovici opened a small bakery in Lakewood before moving into a corner café at 1298 South Broadway; she has since expanded to the Denver Tech Center and Stanley Marketplace and, after a $3.5 million investment last November, plans to open eight new stores.
