"I learned that Copperworks Distilling recently bought the 12,000-square-foot brewing facility on Post Alley from Pike Brewing — a move that feels perfectly timed because Pike moved to SoDo and Copperworks needed a brewhouse to increase production. I was intrigued to find out that their spirit-making process begins by brewing a hop-free beer, which is then distilled at Copperworks’s distillery on the downtown waterfront. They also plan to open a cocktail bar in the new space next to the historic Gum Wall and the Pike Pub, a few blocks from the distillery’s tasting room, with the explicit aim of catering to tourists and other visitors to the nearby Pike Place Market." - Harry Cheadle
