"At this opulent Indian restaurant in The Woodlands, executive chef Jassi Bindra has fashioned a luxe, theatrical experience that Eater Houston named Best Restaurant of the Year in 2022. I take diners on a journey through the eyes of a fictional Indian princess, with a swanky tapas bar serving Indian street food and a plush dining room offering the gamut from 'holy moly' bread and comforting fusions like tandoori mac and cheese to extravagant entrees such as pan-seared mushrooms with truffle, whole-roasted Queens Duck, and a red wine-braised lamb shank. Since arriving in Houston in 2022, Bindra has expanded his techniques by incorporating Texas beef—creating Indian spice rubs for steaks, new basting butters, and sauces—and he has launched a chef's series that rotates guest chefs (including Alex Au-Yeung from Katy’s Phat Eatery and New York chef Bao Bao) while planning future collaborations with chefs like David Skinner.
