"I learned that chef John Folse didn’t think he needed another restaurant, but he was tempted to open Folse Market in the new terminal at the New Orleans airport. He hopes to take the stigma out of the airport gift by offering real Louisiana cooking — plans call for po-boys, fried oysters, gumbo, étouffée and wine — and he envisions a sit-down restaurant where tourists can taste authentic local food, locals leaving New Orleans can buy “hostess gifts” to take with them, and locals returning to the Crescent City can grab dinner to take home.
