"Opening May 22 in Optimist Hall, Enat Ethiopian will offer a second location for the original storefront that opened in 2017 at the Plaza in Shannon Park, which will continue to operate. I note the addition makes it the 27th tenant in the Optimist Park food hall. Owner Tina Tedla says she is excited to open the new stall as a tribute to her mother—the word “enat” means “mother” in Amharic. The menu features traditional East African dishes including crispy sambusa, tibs, miser (lentil stew), tikel gomen (cabbage and carrots), shiro (chickpea stew), and ater (split pea stew), all served with spongy injera. The stall is located between Boxcar Betty’s and Ava Pizzeria in Optimist Hall and will be open 11 a.m.–9 p.m. Sunday through Thursday and 11 a.m.–10 p.m. Friday and Saturday." - Erin Perkins
