"Opening October 1 at the Setai Miami Beach, Japon (stylized Japón) is a Japanese-focused restaurant helmed by executive chef Vijayudu Veena and executive sous-chef Ivàn Monzón; the menu ranges from tuna crispy rice and wagyu sliders to lighter bites like miso black cod lettuce cups and the Japon Caesar topped with a wasabi-truffle dressing. The raw bar includes toro tartare and hamachi jalapeño, while sushi offerings span classics such as spicy tuna and a wagyu roll; heartier options feature an F1 wagyu striploin and a bone-in ribeye from the robata grill, as well as a truffle hotpot with sushi rice, wild mushrooms, and shaved truffle. The drink program covers sparkling wines, whites, rosés, and reds — including high-end selections available by the glass via Coravin — inventive cocktails like the Wasabi Martini and Fuji Blossom alongside classics such as the Espresso Martini and Fig Old Fashioned, and an extensive sake offering with bottles sourced from prominent regions that reflect distinct climates, rice varieties, and water. Designed by Saladino Design Studios, the space includes an ornate courtyard framed by moss-covered murals, a Japanese Torii gate, palm trees and seating by the hotel fountain; an interior main dining room with an undulating wooden ceiling inspired by traditional Japanese architecture, seating upholstered in classic Japanese motifs, custom porcelain feather tiles, a mosaic mural, and Japanese artwork with a “Tsuru” crane greeting symbolizing happiness and good fortune; and a Kyoto Room for private dining up to 14 with its own bar, private entrance, and a collection of Japanese artwork including pieces dating to the mid-1800s." - Olee Fowler
