Guests choose a base and toppings that translate across categories—pickled daikon, soft-boiled egg, roasted koji carrots, sesame broccoli rabe, miso cucumber salad, flavored oils, and garnishes—with simmered bamboo shoots and shabu-shabu shaved beef drawing influence from Adams Morgan’s Shabu Plus. Sushi is intentionally omitted due to tariff-driven costs and a refusal to compromise quality. The look swaps retro film posters for cute anime decor—dancing dumplings and bouncy noodles—framing a walk-up ordering line for made-to-order bowls.
