"I noted that Pancho’s Mexican Restaurant at Downtown Summerlin reopened for curbside pickup on May 1, is offering a 15 percent discount on all food, and 20-ounce house margaritas to-go; it will be open Wednesday–Sunday from 11 a.m. to 7 p.m. and plans to reopen for Cinco de Mayo on May 5. The menu includes a burrito del mar with sautéed shrimp, genuine crab, onions, tomatoes, bell peppers, and rice, deep fried and covered with salsa verde especial, topped with melted cheeses, sliced avocados, and sour cream; pollo asado (a boneless breast marinated with achiote, garlic, and Mexican herbs, grilled Yucatan style, and served with an enchilada); and chimichanga de pollo (a flour tortilla filled with spiced shredded chicken and cheeses, then deep fried). To order, call 702-982-0111." - Susan Stapleton
