"The former general manager of Essential by Christophe, who also worked at Bouley and Minetta Tavern, is opening a spot in the old Quality Eats space in the West Village. The food will be modern American, which, in this case, is shorthand for bison tartare with calabrian chile gochujang, chile-garlic charred kingfish, and milkshakes with dark chocolate, coconut, and brown-butter honey.
