"Jason Atherton, the English chef behind Pollen Street Social and Row on 45, is arguably the most decorated restaurant owner on the island. He opened the stylish, reservation-only spot as a love letter to his wife, Irha, who was born here, and to celebrate Cebuanos’ passion for pork. The result is an indulgent menu of dishes that keeps us coming back, like their signature confit pork belly, crunchy salt and vinegar pork, and truffle mac and cheese topped with, yes, glazed pork belly. Though this place is definitely upscale, the brick-and-wood dining room has a pub-like feel, so you won’t be too shy to roll up your sleeves and eat with gusto. After, slink over to the adjoining bar for a Notorious P.I.G., or anything else from their hip-hop-inspired cocktail list—half the fun is reading the menu." - Chandra Joshua
