There’s equal delight in a tangy Uttari paanch patta saag made from five leafy greens, a gucchi nadru yakhni, made silky with white pumpkin seed and ridge gourd puree, and a fennel-and-allspice-rubbed battak ke kebab served with a delicate yet meaty broth.
