"This vegetarian restaurant in a suburban mall uses no onion, garlic, mushrooms, or paneer in its fancy but fun 16-course Ayurvedic tasting menu. They take this specific kind of vegetarianism as a challenge, embracing it to extract as much flavour from the available ingredients as possible. Even courses with a single morsel reveal bold, unintuitive flavor combinations like sunchoke, okra, and kokum, or bitter gourd, sweet potato, and raw mango.
