Their selection spans Spain’s diverse vermut-producing regions, and they also offer a handful of vermut-based cocktails, like the sweet and frothy Moreneta (vermut rojo and beer), or the vermut-heavy Negroni—poured generously, topped with a couple of olives (which should absolutely be more of a thing)—at a steal for €6.
