"Nozomi might serve the best sushi in Spain—and it happens to be right here in Valencia. The seared salmon nigiri with mayo and roe is iconic, but the unagi is the soul of the place: rich, delicate eel that nods to Valencia’s own Albufera, where fresh eel has been a staple for centuries. Everything from the dobin soup to the toro tartare and lobster uramaki is impeccable. Designed by Masquespacio, the origami ceiling glows above the main dining room, and the open sushi bar stays locked in with quiet focus. Book downstairs or at the counter if you can—upstairs loses a bit of the buzz and that front-row view of the chefs at work, but this is a tough reservation to land, so take what you can get.
