Whether you’re biting into a lean piece, a fatty piece, or a bit of crackling, every part of the pig is crisp on the outside and meltingly tender inside. The griot is perfect on its own, but the pikliz are also exceptional—made with a combination of citrus and vinegar. Piman also serves other fritay, like tassot, along with Haitian staples like legim and poul nan sòs.
