The yak korma will likely pique your curiosity, as it should—this delicious meat can be hard to find, and comes highly recommended by both locals and staff. (It turns out the high altitude of Durango makes it a great spot for raising yaks, so the Himalayan Kitchen is able to source from local ranchers.)
