The Hillstone Group owns EHG, so if you’ve been to a Hillstone or Houston’s, you have some idea of what to expect: not too formal, but not too casual either. Think dinner at someone’s art-collecting aunt’s house, complete with the enviable art collection and fireplace. And yes, a new, icy glass to refresh your martini with midway through sipping. The ribs and a nice little salad are the move, though Hamptons-exclusive items like pan-fried fluke and fried bay scallops with cocktail sauce always hit.
